CorkScrew BBQ: Precision, Patience, and a Place Worth Waiting For

My first visit to CorkScrew came wrapped in ignorance, which is sometimes the best way to find a place worth remembering. I did not know the full history yet — that it had started from humble beginnings and fought its way into the conversation with the best barbecue joints in Texas. I only knew my brother-in-law had told me to go, so one early morning I met my father there. With a cup of complimentary coffee in hand, we watched as the line started to stack up. Sleepy smoke drifted quietly through the air, the brisk morning slowly woke as the sun began to creep out from behind the clouds, and even the quiet line came alive and began to buzz. I still did not know what awaited us, but by then it was obvious we had wandered into something worth remembering.


What struck me about CorkScrew first was not even the food. It was the line. Every time I have been to CorkScrew, the line has been part of the experience, not just the price of admission. My father and I struck up conversations almost immediately. The locals and regulars all seemed to know the same thing before I did: that we were in for something special. There is a certain energy to a line like that. No forced hype. No social media theater. Just avid barbecue fans who knew they had shown up to the right place. Back then, before becoming The Unofficial BBQ Guy, I was still in my rookie season. I was learning on the fly, still figuring out what separated good barbecue from true craftsmen. That line was my initiation.

After a short wait, we placed our order, grabbed our tray when our name was called, and sat down to eat. What struck me was not one flashy bite, but how complete the whole tray felt. Every part of it was executed with intention. Nothing felt accidental, nothing felt overlooked, and nothing felt like filler. The proteins, the sides, all of it reflected the same discipline. That was when it clicked for me: CorkScrew was operating at a level of craftsmanship and consistency that most places never reach.


The first visit got my attention. The return visits made me a believer. On my second trip, I was almost waiting for something to slip. It never did. If anything, the whole place felt even more dialed in. And it just kept happening every time I went back, and back, and back. Nothing dropped below excellent. CorkScrew just kept holding the line, then nudging a little higher. In barbecue or any restaurant for that matter, that kind of consistency is rare. Anybody can have a big day, few places can do it over and over again without letting something get lazy, overlooked, or phoned in.


That is why CorkScrew rose to the top in my mind. That consistency is why a Michelin star made so much sense here; CorkScrew was awarded one star in 2024.

I keep working my way through the menu — the salads, the tacos, the stuffed potatoes — and the standard has never wavered. Everything feels considered. Everything feels right. I still need to spend more time with the sandwiches, and as of writing this, I am still trying to get there on a Saturday for the beef rib. That update will come soon enough.


If you are going for the first time, get the trinity, the sweet and spicy coleslaw, the potato salad, the cobbler, and do not skip the tacos.
